Well I forgot to take the camera with me when I went over to my friends so I do not have any pictures of the Pollo de limón con chorizo y cerveza that I made. It was incredible though and next time I make it I will definitely take pictures. I also made a breakfast casserole this weekend and it was really good.








First I fried some bacon until crispy, about 4 slices.










Spray a 4"x4" pan with cooking spray.

Beat 4 eggs and salt and freshly ground pepper to taste.
  









 Put 2 cups of frozen hash browns on the bottom of the pan. Crumble the bacon over the top.









Sprinkle with 1 cup sharp cheddar cheese.
Pour eggs over the top of the hash browns and bacon.

Use 1 can of refridgerator biscuits to top the cassarole.
Now I baked this at 325 for 10 mins, the biscuits were getting done but the eggs were not setting up completly, so I had to keep putting it back in and lowering the oven temprature because I did not want to burn the biscuits. So when I make this one again I will cook it at 300 degrees for 35 to 40 mins.


The end result. It was really good and easy to do.

Drats! I wanted to see the chix dish! Next time! The br'fast casserole looks scrumptious! Scooped into a bowl and you have heaven! A man that can cook! Big 10++++ ! :)
